A Proud Origin Story
Condimentum was founded in 2016 in response to the closure of the historic Colman’s mustard and mint operations in Norwich. In a remarkable show of resilience and regional pride, a consortium of local growers came together to create an independent production facility. Their mission: to preserve Norfolk’s mint and mustard legacy, while innovating for a modern, global marketplace.
Significantly, many members of the original Colman’s team transitioned to Condimentum, carrying forward not only years of expertise but also a unique sense of community, continuity, and craftsmanship.
A World-Class Facility
At the heart of Condimentum is a 25,000 sq ft, state-of-the-art mill – one of just three in the world capable of producing double superfine mustard flour. With a blend of traditional milling practices and advanced processing technologies, they handle more than 6,000 tonnes of mustard seed and 2,000 tonnes of fresh mint each year.
Crucially, their Norfolk location allows them to process fresh mint within just 2 hours of harvest, preserving its distinctive flavour and ensuring top-tier ingredient quality.
Their operational excellence and flexibility have enabled them to build strong, lasting relationships with food manufacturers in Europe, the Middle East, South America, Australia, and beyond.
